Chilled, it is a spicy conglomeration of smoke and earth, round and mouth-filling, clean and acidic. Warming toward 60°, it becomes a lilikoi nectar-infused mash of intense floral and butter. Either way, a brilliant Albariño matching perfectly with gia vi nâ’u canh chua vegetables and Chinese sausage, dusky in the finish, fruit peeling off layers and layers of rich intensity, never pausing in its decimation of boring white wine, apple-green and barnyard straw in perfect union toward a clawingly dry finish.
