Ridiculously pale yellow, instant mousse settles down to nary a stream. Slightly papery nose of light cream and earthy citrus and a bit of cellar-floor.
Rich and classic in the mouth, light almond-paste with liliquoi and golden plum. Sweetness well in check–I’m guessing under 10. Full and austerely-fruited, good acid and the blast of foam invigorate the palate in beautiful fashion. Another extremely well-done Asolo Prosecco, able to stand proudly alongside top-notch bubbles from all over the world.
