
I love pulling out these little *low-intervention* wonders out of the cellar with WAY TOO MUCH age on them. They develop so differently–or maybe not so… just *different*. Gobs of milky sediment a the bottom, a nose with distinct toastiness: kinda a burnt-rubber nuance right where the mineral and tropical leave off.
Tasting it is a sharp experience, with definite sprite feeling along the tongue. Figured it *should* have settled down by now, but there it is. Perhaps it’s just the chrystalline acid climbing out. Rich and ripe down tertiary trails, the fruit polished into dense syrup peppered with tingle. Finish is likewise sharp and pointed, these are amazing wines designed to drink young and I know I’m breaking that rule. But it’s good.
