
The last of my 2013’s and a true testament to this unsung hero’s ability. Medium pfffft, easy foam and early bubbles which disappear quickly, leaving traces of meandering streams from the bottom, but almost none. Smells like apple cider, dusty and savory with little yeastiness and perhaps even a trace of petrol. Calm but sharp on the tongue, the fruit a bright Granny Smith with biting tinges of effervescence curling all receptors. Slight mousse explosion, then all acid and tangy body finishing with the distinct patina of age. Ridiculously bright and fresh, I’m a bit shocked at the ease and vibrancy at which it drinks, I feel like my 14’s and 15’s taste FAR more glossy and reductive from recent experiences. Bone dry, thought the “Natural” has been proven to be more of a trademark than a definitive placement of dosage–or lack of it. And yes, I feel later vintages have adopted a healthier inclusion of sugar but to me, it will always be Korbel Natural. Glorious throughout.
